East Carolina Mustard Sauce Recipe

Here is a basic recipe for my favorite BBQ sauce.  It is easy to make, just let it sit in the fridge over night to give the ingredients a chance to get to know each other.

2 cups apple cider vinegar
2 table spoons molasses
1 table spoon dry mustard
1/2 cup butter
1/2 teaspoon cayenne pepper
1 tablespoon Worcestershire
1 cup packed dark brown sugar
4 teaspoons cornstarch

Combine all the ingredients EXCEPT the cornstarch in a saucepan over medium heat.

Mix the cornstarch with 4 teaspoons of water and mix.  Whisk the cornstarch slurry into the sauce and bring to a quick boil.  Once it begins to boil, reduce heat to simmer and allow to cook for about five to ten minutes.

The sauce will continue to thicken as it cools.

You can adjust the amounts of any of these ingredients to tweak the flavors to just where you want them.
